Every baguette, ciabatta, sour dough boule, whole grain boule, pecan, walnut and pistachio bread is hand shaped and baked in our own hearth. And, when we say they are unique, we mean it quite literally - there is not a bread like it anywhere in the world. That's because all our bread is made with the starter we created ourselves five years ago from water and organic, milled wheat. Every loaf we make is descended from that starter and baked fresh two to four times a day.
While we fill our bakery everyday with classic styles of old world bread, every season and holiday brings new selections including challah, stollen, colomba pasqual, panettone and many more.
"Bread making is very hard work. We make everything by hand, and in a bakery like ours, speed and efficiency are extremely important. We come in at 4AM everyday, when everyone else is sleeping, and give a 110% effort to make the best breads possible."
